These easy Swedish Meatballs are a weeknight hero. Most of the ingredients are ones you would likely have in your fridge or pantry. That's the idea, anyway.
Another great thing about this recipe- other than the fact that the WHOLE FAMILY will love it- is that it freezes well. So, go ahead and double it to freeze half so that next time you are out of ideas, you can just pull it out!
Creamy and savory, they are great over mashed potatoes, rice, or egg noodles with a green side and you've got the perfect dinner in 30 minutes.
This creamy, tasty Swedish meatball recipe comes together quickly and includes ingredients you would likely have on hand. It's great over mashed potatoes, rice, or egg noodles.
In a large bowl, combine ground beef, bread crumbs or panko, onions, eggs, allspice, salt and pepper. Mix well (you can use your hands or a spoon.) Form mixture into balls about 1 inch to 1.5 inches in diameter. This should make about 20-25 meatballs.
Add olive oil to pan and cook meatballs in batches, browning all sides (4-5 minutes). Transfer to separate dish or plate with paper towel. Set aside. Now for the gravy.
In the same skillet, melt butter. Whisk in flour until lightly browned, about a minute or two. Gradually whisk in beef broth and cook, whisking constantly, until slightly thickened. Stir in sour cream and season with salt and pepper, to your liking.
Add in meatballs and cook, stirring occasionally, until heated through and thickened, about 8-10 minutes.
Serve over mashed potatoes, egg noodles or rice for a happy family! You could make a double batch of these meatballs in advance and freeze half of them (in the raw stage) to pull out another busy night. You’d have to freeze them on a cookie sheet (so they don’t turn into a blob) then transfer to a freezer bag.
